Looking at upgrading my new taco. Going with a 17x8 wheel, what size tire should I get? Trying to avoid getting a lift so maybe a 275?

You might get away with 275's. Any bigger you will need a lift.

I have 275 60r18 all terrain tires on my 13 tacoma without a lift any they don't rub.

I have a lowered truck pushing 265/70/r16. The 265/70/r17 or 265/75/r16 will fit stock trust me.

And that is the biggest I can go ? Without a lift correct ? But my wheel gap from the trim on the sides is about 3" 1/2 and on top about 6 " and I have 265/65r17

I would suggest trading in the pre runner for a 4x4

if you want to do trimming, and get some new wheels, you can do 285s, just better love a sawzall and a hammer.... but no trimming is 265/70/r17
