A mom and pop restaurant. Make all the breads and desserts fresh daily. The they don’t have a dessert menu they bring out a huge tray of all the slices of pie they made for that day and you pick what looks good. Kind of like your muffler theory.

Thats close... but id argue i need to taste test.
